This coming Thursday is Thanksgiving already. Where does the time go? I hope everyone remembers the true purpose of the holiday, and takes some time to be thankful for all of the loved ones in our lives and the many blessings we have received. One of the things I am thankful for, which combines family and blessings, is that my mother is still able to bake the pies every Thanksgiving. There is nothing like my mother’s homemade pies! In honor of Thanksgiving, I am sharing below the recipe for one of the pies I hope she serves: Chocolate Brownie Pie
2 squares unsweetened chocolate 2 Tablespoons butter 3 eggs ½ cup sugar ¾ cup dark corn syrup ¾ cup pecans 1 pie crust Melt the chocolate and butter together over hot water. [Author note: Or in a double boiler, if you have one.] Beat the eggs, sugar, chocolate mixture and syrup together. Beat well. Mix in the pecans. Pour into prepared pie crust. Bake in 375 degree oven for 40-50 minutes, or just until set. Serve warm or cold. Can serve with ice cream or whipped cream, if desired.
